 General Gates Popovers

General Horatio Gates’ best rice popovers

General Horatio Gates (1728-1806) had a special love for rice popovers made in this manner. As an American general during the Revolutionary War, he defeated British troops under General Burgoyne at Saratoga on October 17, 1777.

Put the cooked rice into a wooden mixing bowl and mash until smooth. In another bowl sift together the flour, baking powder, sugar and salt. Sift twice. Beat the egg yolks until creamy and the egg whites until they are a stiff froth. Blend the egg yolks and whites together and stir them into the rice. Then add the cream and flour alternately, and beat until smooth. Butter some muffin pans and sift a little flour into each. Fill each 2/3 full with the mixture. Bake in a hot oven (425 degrees) for 15 minutes. Serve while hot with butter and maple syrup. This recipe makes 20 popovers

Rice Popovers:

1 cup boiled rice, cold

2 cups flour

2 teaspoons baking powder

2 tablespoons sugar

1 teaspoon salt

2 eggs, separated

2 cups cream
